Horchata (Latin hordeata, 'barley') is a refreshing drink (including dessert), prepared with water, sugar and wet (or ground) groundnuts, besides its flavor enhancing ingredients such as cinnamon and the skin of a lemon. Tigernuts are small tubers shaped knots that come from the roots of the sedge countersunk (yellow nutsedge), which is named for the shape of its fruit, like hazelnut.
